These Chipotle Tahini Bowls are the perfect balance of hearty, healthy, and irresistibly creamy thanks to a smoky, zesty chipotle tahini sauce. Packed with roasted sweet potatoes, kale, avocado, and protein-rich quinoa, it’s a customizable bowl that’s great for lunches, dinners, or weekly meal prep.
Ingredients
For the Chipotle Tahini Sauce:

120 ml olive oil (1/2 cup)

60 ml water (1/4 cup)

60 ml tahini (1/4 cup)

1–2 chipotles in adobo sauce

1 small garlic clove

60 ml freshly squeezed orange juice (1/4 cup)

1/2 teaspoon salt (2.5 ml)
For the Bowls:

2–3 large sweet potatoes, peeled and cubed

1 tablespoon cornstarch (15 ml)

1 tablespoon olive oil (15 ml)
-
1/2 teaspoon salt (2.5 ml)

Soft-boiled eggs (as desired)

Sautéed or massaged kale (about 2 cups / 500 ml)

Cooked quinoa (about 1 cup / 250 ml)

Sliced avocado (1–2 pieces)

Optional: roasted broccoli, grilled chicken, or other desired toppings
Instructions

Prepare the chipotle tahini sauce by adding olive oil, water, tahini, chipotles in adobo, garlic, orange juice, and salt into a food processor. Blend until smooth and creamy. Adjust salt to taste.

Roast the sweet potatoes: Preheat oven to 230°C (450°F). Toss cubed sweet potatoes with cornstarch, then olive oil and salt. Spread on a parchment-lined baking sheet. Roast for 20 minutes, stir gently, then roast another 10–15 minutes until golden brown and crispy.

Soft-boil the eggs: Bring a pot of water to a gentle boil. Add eggs and cook for 6.5 minutes. Transfer to an ice water bath, then peel and halve.

Prepare quinoa as per package directions. Sauté or massage kale until tender.

Assemble your bowls: Start with quinoa and kale, top with sweet potatoes, avocado slices, soft-boiled eggs, and any extras you like.

Drizzle generously with the chipotle tahini sauce. Enjoy immediately or refrigerate for meal prep.
