Description

Creamy dump-and-bake chicken tzatziki casserole with rice, garlic, herbs, and Greek yogurt baked in one dish.


Ingredients

  • 1 pound boneless skinless chicken breasts or thighs
  • 1 cup long-grain white rice
  • 1 1/2 cups chicken broth
  • 1 cup plain Greek yogurt
  • 1/3 cup grated cucumber
  • 2 tablespoons olive oil
  • 2 garlic cloves
  • 1 teaspoon dried dill
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground cumin
  • Salt and black pepper
  • Juice of 1 lemon
  • 1/2 cup crumbled feta cheese
  • 1/4 cup fresh parsley or cilantro

Instructions

  1. Preheat oven to 375°F and grease a 9×13-inch baking dish.
  2. Stir rice, broth, olive oil, garlic, herbs, salt, and pepper in the dish.
  3. Arrange chicken evenly over the rice mixture.
  4. Mix yogurt, cucumber, and lemon juice, then spread over chicken and rice.
  5. Cover tightly with foil and bake 35 to 40 minutes until rice is tender.
  6. Uncover, add feta, and bake 5 minutes more.
  7. Rest briefly, garnish, and serve warm.

Notes

  1. Use brown rice with extra liquid and longer bake time.
  2. Store leftovers refrigerated up to four days.
  3. Reheat with a splash of broth for best texture.
