Ingredients

- 1 tablespoon olive oil
- 1 garlic clove, minced
- 1 yellow onion, diced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 15 ounces black beans, drained and rinsed
- 1 tablespoon taco seasoning
- 4 whole wheat tortillas (8-inch)
- 2 cups cooked chicken, shredded
- 2 cups low-fat Mexican blend cheese
- 1 cup enchilada sauce
- 1/4 cup green onion, chopped
Instructions
- Preheat oven to 375 degrees and grease a 9×13 baking dish.
- Heat olive oil in a skillet over medium-high heat.
- Add garlic and cook briefly, then add onion and bell peppers and cook until soft.
- Stir in black beans and taco seasoning, then remove from heat.
- Layer tortillas, half of the bean mixture, chicken, sauce, and cheese in the baking dish.
- Repeat layers, finishing with cheese on top.
- Cover and bake for 15 minutes, then uncover and bake until golden.
- Let cool slightly and top with green onion before serving.
Notes
- Let the casserole rest before slicing for clean servings.
- Adjust seasoning to taste if you prefer more spice.
