Ingredients

- 2 pounds chicken wings and drumsticks
- 3 medium potatoes, diced
- 2 carrots, sliced
- 1 bell pepper, chopped
- 1 onion, chopped
- 3 garlic cloves, minced
- 2 ears corn, cut
- 2 bay leaves
- 1 teaspoon allspice
- 1 teaspoon black pepper
- 2 teaspoons salt
- 2 limes, juiced
- 1 hot pepper optional
- 2 tablespoons vegetable oil
- 6 cups water
- Fresh parsley
- Fresh thyme
Instructions
- Rinse and soak chicken in lime water, then drain
- Sauté onions, peppers, and garlic in oil
- Brown chicken lightly in the pot
- Add vegetables, water, and spices
- Simmer gently for one hour
- Adjust seasoning and finish with herbs
