Description
Crispy flour tortillas filled with seasoned chicken, sautéed bell peppers, onions, and melted Mexican cheese. A quick 30-minute family dinner perfect for busy weeknights.

- 1 tablespoon oil
- 1 pound chicken breast, cut into small pieces
- 1 tablespoon taco seasoning
- 1/2 large bell pepper, diced
- 1/2 yellow onion, diced
- 2 tablespoons unsalted butter
- 6 flour tortillas
- 2 cups Mexican shredded cheese blend
Instructions
- Preheat a skillet with oil over medium heat. Add chicken and taco seasoning. Cook for 4 minutes.
- Add diced bell pepper and onion. Cook for another 5 minutes until chicken is cooked through and vegetables soften. Set aside.
- In a clean skillet, add butter and place a tortilla on top.
- Add cheese and chicken mixture to one half of the tortilla. Top with more cheese and fold over.
- Cook until golden brown on one side, then flip and cook until the second side is golden and cheese melts.
- Repeat with remaining tortillas and filling. Serve warm.
Notes
- Do not overcrowd the skillet when cooking chicken.
- Keep heat at medium to prevent burning the tortilla before cheese melts.
- Reheat leftovers in a skillet to maintain crisp texture.
