Description

Crispy flour tortillas filled with seasoned chicken, sautéed bell peppers, onions, and melted Mexican cheese. A quick 30-minute family dinner perfect for busy weeknights.


Ingredients

  • 1 tablespoon oil
  • 1 pound chicken breast, cut into small pieces
  • 1 tablespoon taco seasoning
  • 1/2 large bell pepper, diced
  • 1/2 yellow onion, diced
  • 2 tablespoons unsalted butter
  • 6 flour tortillas
  • 2 cups Mexican shredded cheese blend

Instructions

  1. Preheat a skillet with oil over medium heat. Add chicken and taco seasoning. Cook for 4 minutes.
  2. Add diced bell pepper and onion. Cook for another 5 minutes until chicken is cooked through and vegetables soften. Set aside.
  3. In a clean skillet, add butter and place a tortilla on top.
  4. Add cheese and chicken mixture to one half of the tortilla. Top with more cheese and fold over.
  5. Cook until golden brown on one side, then flip and cook until the second side is golden and cheese melts.
  6. Repeat with remaining tortillas and filling. Serve warm.

Notes

  1. Do not overcrowd the skillet when cooking chicken.
  2. Keep heat at medium to prevent burning the tortilla before cheese melts.
  3. Reheat leftovers in a skillet to maintain crisp texture.
