Juicy chicken fajitas cooked on a flat top griddle with peppers, onions, and a creamy cilantro lime sauce.

- 1/4 cup extra virgin olive oil
- 1 tablespoon extra virgin olive oil
- 2 tablespoons lime juice
- 3 teaspoons chili powder
- 3 teaspoons ground cumin
- 1 1/2 teaspoons kosher salt
- 1 teaspoon paprika
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano leaves
- 1/4 teaspoon ground black pepper
- 1/8 teaspoon ground cayenne pepper
- 6–8 boneless skinless chicken thighs
- 1/2 red onion sliced
- 1/2 yellow onion sliced
- 3 bell peppers sliced
- 1 tablespoon minced garlic
- 2 tablespoons fajita seasoning
- 3/4 cup plain Greek yogurt
- 1/4 cup mayonnaise
- 2–4 tablespoons lime juice
- 1 tablespoon olive oil
- Zest of 1 lime
- 1/4 cup chopped fresh cilantro
- 1/4 teaspoon kosher salt
- 1/8 teaspoon ground black pepper
- Tortillas warmed
- Lime wedges
- Fresh cilantro leaves
- Sour cream optional
- Guacamole optional
Instructions
- Whisk olive oil, lime juice, chili powder, cumin, kosher salt, paprika, onion powder, garlic powder, oregano, black pepper, and cayenne pepper in a bowl
- Add chicken thighs to the marinade and toss until fully coated
- Combine sliced onions, bell peppers, minced garlic, and fajita seasoning in a bowl
- Blend Greek yogurt, mayonnaise, lime juice, olive oil, lime zest, cilantro, salt, and pepper until smooth to create cilantro lime sauce
- Heat a flat top griddle and drizzle olive oil over the surface
- Cook marinated chicken for 3 to 4 minutes per side until internal temperature reaches about 162°F
- Remove chicken from the griddle and allow it to rest
- Cook the seasoned vegetables on the griddle for 3 to 5 minutes until tender
- Slice the rested chicken into strips
- Serve vegetables and chicken inside warm tortillas topped with cilantro lime sauce, fresh cilantro, and lime juice
Notes
- Chicken thighs produce juicier fajitas but chicken breast can be used
- If using chicken breast, butterfly or slice into strips for even cooking
- Use dairy free yogurt instead of Greek yogurt to make the sauce dairy free
- Serve over rice instead of tortillas to make a gluten free fajita bowl
