Instructions
- Season the chicken with olive oil and all spices until evenly coated.
- Heat a large skillet over medium-high heat and cook the chicken until browned and fully cooked, then remove and rest.
- In the same skillet, sauté the bell peppers and onion until tender-crisp.
- Slice the cooked chicken into strips.
- Assemble bowls with rice, chicken, and vegetables.
- Top with avocado, salsa, cheese, and fresh cilantro before serving.
