Description

A twist on the classic Chicken Cordon Bleu, this meatloaf is packed with cheesy, creamy goodness and tender chicken. It’s the perfect comfort food, with bold flavors and an easy preparation method. Ideal for family dinners, special occasions, or meal prep.


Ingredients

  • 1 lb ground chicken

  • 1/2 cup breadcrumbs

  • 1/4 cup grated Parmesan cheese

  • 1 egg

  • 1/4 cup milk

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • Salt and black pepper, to taste

  • 8 oz Swiss-style cheese (sliced)

  • 1 tbsp butter

  • 1 tbsp all-purpose flour

  • 1 cup whole milk

  • 1 tbsp Dijon mustard

  • 1/4 cup grated Parmesan cheese (for sauce)


Instructions

  • Preheat the oven to 375°F (190°C).

  • In a large bowl, mix ground chicken, breadcrumbs, Parmesan, egg, milk, garlic powder, onion powder, salt, and pepper.

  • Flatten the mixture into a rectangle on parchment paper.

  • Place cheese slices on top, leaving space at the edges.

  • Roll the mixture into a loaf shape using the parchment paper to help. Pinch the seam to seal it.

  • Transfer to a greased baking sheet, seam side down.

  • Bake for 45–50 minutes, or until the internal temperature reaches 165°F (74°C).

  • While the loaf bakes, make the sauce: Melt butter in a pan, whisk in flour for 1 minute, then add milk and Dijon mustard. Stir in Parmesan and cook until smooth.

  • Let the meatloaf rest for 5–10 minutes.

  • Slice and serve with the creamy Dijon sauce.

Notes

Use ground turkey as an alternative to chicken.

For a lower-carb version, swap breadcrumbs with almond flour.

Add vegetables like spinach or zucchini for extra nutrition.
