Description

Tender shredded chicken, colorful vegetables, creamy chicken gravy, and a buttery Bisquick dumpling topping bake together in this comforting family casserole.


Ingredients

  • 1 stick salted butter
  • 3 cups cooked and shredded boneless skinless chicken breasts
  • 1/4 cup finely chopped onion
  • 1/4 cup finely chopped green bell pepper
  • 1/4 cup finely chopped red or orange bell pepper
  • 1 teaspoon poultry seasoning
  • 1 teaspoon freshly ground black pepper
  • 2 teaspoons salt
  • 2 cups Bisquick baking mix
  • 2 cups milk
  • 2 cups chicken stock
  • 1 can condensed cream of chicken soup, about 10.5 ounces

Instructions

  1. Preheat the oven to 350°F.
  2. Place the butter in a 9-by-13-inch casserole dish and put the dish in the oven while it preheats.
  3. Remove the dish after the butter melts and spread the shredded chicken evenly over the butter.
  4. Scatter the chopped onion and bell peppers over the chicken.
  5. Sprinkle the poultry seasoning and black pepper evenly over the vegetables.
  6. Whisk the Bisquick, milk, and salt in a medium bowl until combined.
  7. Pour the Bisquick mixture evenly over the chicken and vegetables without stirring.
  8. Whisk the chicken stock and cream of chicken soup in a separate bowl until smooth.
  9. Pour the soup mixture evenly over the Bisquick layer without stirring.
  10. Bake uncovered for 60 minutes, or until the top turns golden and the center sets.
  11. Remove the casserole from the oven and let it rest for 10 to 15 minutes before serving.

Notes

  1. Use fully cooked chicken rather than raw chicken.
  2. Do not stir the layers after adding the Bisquick batter or soup mixture.
  3. Reduce the added salt when using salty rotisserie chicken or regular-sodium stock.
  4. Cover the top loosely with foil if it browns before the center sets.
  5. Refrigerate leftovers in an airtight container for three to four days.
