Description

Soft and chewy oatmeal chocolate chip cookies with warm cinnamon, tender oats, and rich chocolate in every bite.


Ingredients

1/2 cup unsalted butter, softened

2/3 cup light brown sugar

1/8 cup white sugar

1 egg

1 tsp vanilla extract

3/4 cup all purpose flour

1/2 tsp baking soda

3/4 tsp cinnamon

1/4 tsp salt

1 1/2 cup quick cooking oats

1 cup chocolate chips


Instructions

1. In a large bowl, cream together the butter, brown sugar, white sugar, egg and vanilla until smooth and creamy.

2. In a separate small bowl, whisk together the flour, baking soda, cinnamon, and salt.

3. Add the dry ingredients to the butter/sugar mixture. Blend until combined.

4. Stir in the oats and chocolate chips.

5. Chill the dough for at least 1 hour.

6. Preheat oven to 350°F. Line a baking sheet with parchment or a Silpat mat.

7. Scoop dough into balls using an ice cream scoop. Place 2 inches apart.

8. Bake for 13 minutes until edges are golden and centers slightly underdone.

9. Let cookies rest on the baking sheet for 5 minutes before cooling on a rack.

Notes

For thicker cookies, chill the dough longer.

Use quick oats for the softest texture.
