- 1 pound dried spaghetti
- 1/2 cup extra-virgin olive oil
- 1 shallot, minced
- 2 garlic cloves, peeled and smashed
- 2 pints red cherry tomatoes
- 1 pint yellow cherry tomatoes
- 1 teaspoon kosher salt
- 2 cups finely grated Parmesan cheese
- 1 cup thinly sliced basil
- 1 cup reserved pasta water
Instructions
- Bring a large pot of salted water to a boil and cook spaghetti until al dente. Reserve 1 cup pasta water before draining.
- Heat olive oil in a large skillet over medium heat and cook shallot and garlic for 2 minutes.
- Add cherry tomatoes and kosher salt, then reduce heat to medium-low and simmer for 15 to 20 minutes until tomatoes begin to burst.
- Add cooked spaghetti, reserved pasta water, Parmesan cheese, and basil to the skillet.
- Toss thoroughly with tongs until the sauce coats the pasta evenly.
- Serve warm or at room temperature.

- Use ripe cherry tomatoes for the sweetest flavor.
- Reserve pasta water to help create a silky sauce.
- Freshly grated Parmesan melts more smoothly than packaged cheese.
