Description

Fresh Cherry Tomato Spaghetti with Parmesan, basil, and sweet tomatoes creates a quick and flavorful pasta dinner perfect for busy nights.


Ingredients

Scale
  • 1 pound dried spaghetti
  • 1/2 cup extra-virgin olive oil
  • 1 shallot, minced
  • 2 garlic cloves, peeled and smashed
  • 2 pints red cherry tomatoes
  • 1 pint yellow cherry tomatoes
  • 1 teaspoon kosher salt
  • 2 cups finely grated Parmesan cheese
  • 1 cup thinly sliced basil
  • 1 cup reserved pasta water

Instructions

  1. Bring a large pot of salted water to a boil and cook spaghetti until al dente. Reserve 1 cup pasta water before draining.
  2. Heat olive oil in a large skillet over medium heat and cook shallot and garlic for 2 minutes.
  3. Add cherry tomatoes and kosher salt, then reduce heat to medium-low and simmer for 15 to 20 minutes until tomatoes begin to burst.
  4. Add cooked spaghetti, reserved pasta water, Parmesan cheese, and basil to the skillet.
  5. Toss thoroughly with tongs until the sauce coats the pasta evenly.
  6. Serve warm or at room temperature.

Notes

  1. Use ripe cherry tomatoes for the sweetest flavor.
  2. Reserve pasta water to help create a silky sauce.
  3. Freshly grated Parmesan melts more smoothly than packaged cheese.
