Description

Crispy baked Cheesy Zucchini Tots made with zucchini, cheddar cheese, and seasonings. A simple appetizer or snack that is family friendly and easy to prepare.


Ingredients

  • 3 medium zucchini, grated
  • 2/3 cup panko breadcrumbs
  • 1/2 cup sharp cheddar cheese, finely grated
  • 2 eggs
  • 1 teaspoon cornstarch
  • 3/4 teaspoon kosher sea salt
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon dried parsley
  • 1/8 teaspoon paprika
  • Avocado oil or cooking spray

Instructions

  1. Preheat oven to 425°F and grease a baking sheet.
  2. Press excess moisture from grated zucchini.
  3. Combine zucchini with breadcrumbs, cheese, eggs, cornstarch, and seasonings.
  4. Shape mixture into small tots using a tablespoon.
  5. Arrange on baking sheet and lightly spray with oil.
  6. Bake 18 to 22 minutes until golden brown and crisp.
  7. Serve immediately with your favorite dipping sauce.

Notes

  1. Store in the refrigerator for up to 3 days.
  2. Freeze cooked or uncooked tots for up to 3 months.
  3. Reheat in a 375°F oven until crisp and heated through.
