Ingredients

- 1 tablespoon olive oil
- 1 cup long-grain white rice
- 2 cups chicken broth
- 2 tablespoons butter
- 1 medium zucchini, shredded
- 1 cup shredded sharp cheddar cheese
- 1/2 teaspoon garlic powder
- Salt to taste
- Black pepper to taste
- Splash of milk as needed
Instructions
- Heat olive oil in a medium saucepan over medium heat.
- Add rice and stir to coat. Toast until lightly golden.
- Pour in chicken broth and bring to a boil.
- Reduce heat to low, cover, and cook for 15 minutes.
- Remove from heat and quickly add butter, zucchini, cheddar, and garlic powder.
- Cover immediately and let rest for 10 minutes.
- Uncover and stir until creamy and combined.
- Season with salt and pepper.
- Add a splash of milk if a thinner texture is desired.
- Serve warm.
Notes
- Work quickly when adding the zucchini and cheese to keep steam trapped in the pan.
- If needed, briefly return the pan to low heat for 30 seconds before the resting period.
- Use sharp cheddar for the best flavor.
