Description

Cheesy Twisted Pasta with Creamy Garlic Parmesan Chicken is a comforting weeknight dinner that brings together juicy seared chicken, a velvety Parmesan garlic cream sauce, and perfectly twisted pasta that clings to every bit of flavour. It’s cosy, family-friendly, and ready in just 35 minutes.


Ingredients

  • 2 tbsp (30 ml) olive oil

  • 2 chicken breasts (about 450 g)

  • 1 tsp (5 g) salt

  • 1 tsp (2 g) black pepper

  • 4 cloves garlic, minced

  • 1 cup (240 ml) heavy cream

  • 1 cup (240 ml) chicken broth

  • 1 cup (100 g) grated Parmesan cheese

  • 12 oz (340 g) twisted pasta (rotini or fusilli)

  • 1 tbsp (4 g) chopped parsley (optional, for garnish)


Instructions

  1. Cook the pasta – Bring salted water to a boil, cook twisted pasta until al dente, drain, and set aside.

  2. Cook the chicken – Heat olive oil in a skillet over medium-high. Season chicken with salt and pepper, then sear 5–6 minutes per side until golden and cooked through. Remove and slice.

  3. Make the sauce – In the same skillet, sauté garlic for 1 minute. Stir in cream and chicken broth, then bring to a gentle simmer. Add Parmesan cheese and stir until smooth and slightly thickened.

  4. Combine – Return sliced chicken to the skillet, simmer 2–3 minutes, then toss in pasta until coated.

  5. Finish & serve – Garnish with parsley and serve warm.

Notes

Sear chicken well for maximum flavor.

Reserve some pasta water to loosen the sauce if it thickens too much.

Freshly grated Parmesan melts smoother than pre-shredded.

Rotini or fusilli are best since they trap the creamy sauce.

Slightly undercook pasta if planning to store leftovers to avoid mushiness.
