Ingredients

1 lb Italian ground sausage

1/2 medium yellow onion, diced

3 garlic cloves, minced

1 can (28 oz) whole peeled San Marzano tomatoes

Pinch dried oregano

Kosher salt and black pepper, to taste

10 oven-ready lasagna noodles

8 oz fresh ricotta cheese

1.5 oz parmesan cheese, grated

8 oz fresh mozzarella, sliced

Fresh basil, for garnish
Instructions

In a large cast iron skillet, brown the sausage over medium heat, breaking it up as it cooks.

Add diced onion and sauté until soft. Stir in garlic and cook for 30 seconds.

Pour in the canned tomatoes with juice. Add oregano, salt, and pepper. Crush tomatoes with a spoon. Simmer until thickened.

Remove most of the sauce to a bowl, leaving a layer in the skillet.

Break lasagna noodles to fit and layer them with sauce and ricotta. Repeat layers. Top with parmesan and mozzarella.

Cover skillet and cook on low heat for 15–20 minutes. Press noodles down occasionally.

Uncover and cook for five more minutes to reduce the sauce.

Let it rest for a few minutes off the heat. Garnish with basil and serve warm.
