This Cheesy Meatloaf Casserole combines a tender, seasoned ground beef base with tangy ketchup, creamy mashed potatoes, melted cheddar cheese, crisp bacon, and optional green onions. It is an easy, hearty family dinner that serves six.

- 1/2 cup breadcrumbs
- 1 large egg
- 1/4 cup milk
- 1/4 cup finely chopped onion
- 1 teaspoon garlic powder
- 1 teaspoon salt

- 1 tablespoon Worcestershire sauce
- 1/2 cup ketchup, divided
- 2 cups prepared mashed potatoes
- 1 cup shredded cheddar cheese
- 4 slices cooked bacon, crumbled
- 2 tablespoons chopped green onions or chives, optional
Instructions
- Preheat the oven to 375°F. Lightly grease a 9-by-9-inch baking dish.
- Combine the ground beef, breadcrumbs, egg, milk, onion, garlic powder, salt, black pepper, Worcestershire sauce, and 1/4 cup ketchup in a large bowl. Mix gently until combined.
- Press the meat mixture evenly into the prepared baking dish. Spread the remaining 1/4 cup ketchup over the top.
- Bake for 20 to 25 minutes, until the center reaches 160°F and no pink remains. Carefully drain excess grease.
- Spread the mashed potatoes evenly over the cooked meatloaf layer.
- Sprinkle the cheddar cheese over the potatoes, then add the crumbled bacon.
- Return the casserole to the oven and bake for 10 to 15 minutes, until the cheese melts and bubbles.
- Remove the casserole from the oven. Garnish with green onions or chives, if desired.
- Rest for 10 minutes before slicing into six portions and serving.
Notes
- Use warm or room-temperature mashed potatoes so they spread without pulling apart the meatloaf layer.
- For a make-ahead option, prepare the uncooked meatloaf layer, cover it, and refrigerate it for up to 24 hours. Add about five minutes to the first baking time when cooking from cold.
- Ground turkey or chicken may replace the beef. Cook poultry to an internal temperature of 165°F.
- Refrigerate leftovers in an airtight container for up to four days.
