Description
A comforting one-dish casserole made with savory ground beef, tender white rice, creamy mushroom sauce, and plenty of melted cheddar cheese.

- 1 pound lean ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 cups cooked white rice
- 1 can (10.5 ounces) cream of mushroom soup or cream of chicken soup
- 1/2 cup milk or beef broth
- 2 cups shredded cheddar cheese, divided
- 1 teaspoon paprika
- Salt and black pepper, to taste
- Nonstick cooking spray or butter, for the baking dish
- Chopped fresh parsley, for optional garnish
Instructions
- Preheat the oven to 350°F. Lightly grease a 9-by-13-inch baking dish.
- Heat a large skillet over medium heat. Add the ground beef and diced onion.
- Cook for 6 to 8 minutes, breaking the beef into small crumbles, until the meat has browned and the onion has softened.
- Drain the excess grease from the skillet.
- Stir in the minced garlic and cook for 30 seconds, just until fragrant.
- Whisk the cream of mushroom soup, milk or beef broth, paprika, salt, and black pepper in a medium bowl until smooth.
- Add the cooked rice, beef mixture, 1 cup of cheddar cheese, and prepared sauce to the baking dish.
- Stir gently until the sauce evenly coats the rice and beef.
- Spread the mixture into an even layer and sprinkle the remaining 1 cup of cheddar cheese over the top.
- Cover the baking dish with foil and bake for 20 minutes.
- Remove the foil and bake for another 10 minutes, until the cheese bubbles and the center feels hot.
- Broil for 1 to 2 minutes for a browned topping, if desired.
- Let the casserole rest for 5 minutes.
- Garnish with chopped parsley and serve hot.
Notes
- Use fully cooked rice because the listed liquid will not cook dry rice.
- Drain excess grease from the beef to prevent an oily casserole.
- Freshly shredded cheddar melts more smoothly than packaged shredded cheese.
- Add a small splash of milk or broth when reheating leftovers.
- Refrigerate leftovers in an airtight container for up to 4 days.
- Freeze individual portions for up to 2 months.
