Description
Chewy apple cider cookies stuffed with creamy cheesecake filling and topped with spiced sugar. Perfect cozy fall dessert.
Ingredients
2 cups apple cider
6 oz cream cheese
3 tbsp granulated sugar
1/2 tsp vanilla
1 3/4 cups all-purpose flour
2 1/2 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp allspice
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
3/4 cup unsalted butter
3/4 cup brown sugar
1/4 cup white sugar
2 egg yolks
2 tsp vanilla
2 tbsp apple cider reduction
1/4 cup sugar + cinnamon + nutmeg (for topping)
Instructions
1. Reduce apple cider to thick syrup.
2. Mix cream cheese, sugar, vanilla for filling. Freeze into small balls.
3. Cream butter and sugars, add yolks, vanilla, and cider reduction.
4. Combine dry ingredients, mix into wet. Chill dough 20 minutes.
5. Wrap cheesecake balls in dough. Bake at 350°F for 11–12 minutes.
6. Brush with melted butter and sprinkle spiced sugar.
Notes
Chill dough before shaping for easier handling.
Freeze cheesecake balls until firm before wrapping.
