Description

Cheeseburger Soup is a creamy, hearty soup made with seasoned ground beef, tender potatoes, and melted cheddar cheese for a comforting one-pot meal.


Ingredients

Scale
  • 1 lb ground beef
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 4 cups potatoes, peeled and diced
  • 4 cups chicken broth
  • 2 cups shredded cheddar cheese
  • 1 cup milk
  • 1 cup heavy cream
  • 1 tablespoon olive oil
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic and cook until softened and fragrant.
  3. Add ground beef and cook until browned, breaking it apart as it cooks.
  4. Drain excess grease from the pot.
  5. Stir in diced potatoes and chicken broth.
  6. Bring to a boil, then reduce heat and simmer until potatoes are tender.
  7. Add milk and heavy cream and stir to combine.
  8. Gradually add shredded cheddar cheese, stirring until melted and smooth.
  9. Season with salt and pepper and simmer briefly before serving.

Notes

  1. Do not boil after adding dairy to prevent curdling.
  2. Stir cheese in gradually for the smoothest texture.
  3. Add a splash of milk when reheating if the soup thickens.
