Sauté aromatics – Heat olive oil in a large pot over medium heat. Add diced onion and cook 4–5 minutes until translucent.

Brown the beef – Add garlic and ground beef. Cook 6–8 minutes, breaking up meat until browned. Drain excess fat.

Add vegetables – Stir in potatoes, carrots, and celery. Cook 3–4 minutes to blend flavors.

Simmer – Pour in beef broth, Worcestershire sauce, and Dijon mustard. Bring to a boil, then reduce to simmer for 15–20 minutes until veggies are tender.
