With no grill required and zero mess, these stuffed burger buns are the perfect handheld comfort food. A family-friendly, lunchbox-ready twist on the fast-food classic!

Ingredients

Scale

For the Dough:

  • 400 g strong white bread flour

  • 6 g instant dry yeast

  • 8 g salt

  • 20 g sugar

  • 30 g soft butter

  • 1 egg

  • 180 g cold milk

  • 1 egg yolk + 1 tsp milk (for glaze)

  • Sesame seeds

For the Filling:

  • 400 g minced beef

  • 1 onion, chopped

  • 6 garlic cloves, chopped

  • 10 g Worcestershire sauce

  • Salt & pepper to taste

To Assemble:

  • Cheese slices

  • Pickles

  • Diced, deseeded tomatoes

  • Sauce: 60 g mayo, 30 g ketchup, 30 g mustard

Instructions

  1. Mix milk, yeast, sugar, salt, egg, and butter. Add flour and knead for 6 minutes until soft and elastic.

  2. Cover and proof dough for 2 hours until nearly doubled.

  3. In a hot pan, cook minced beef without stirring for 5 minutes. Stir, add onions, garlic, Worcestershire sauce, salt, and pepper. Cook 5–8 more minutes. Cool completely.

  4. Divide dough into 6 pieces, roll into balls, and rest 30 minutes.

  5. Flatten each dough ball, keeping the center thick. Add filling: beef, cheese, pickles, tomatoes, and sauce. Pinch edges to seal.

  6. Place on parchment-lined tray, cover, and rise for 1 hour.

  7. Preheat the oven to 320°F (160°C) fan. Brush the buns with egg glaze, sprinkle with sesame seeds, and bake for 35 minutes until golden brown.

Notes

Ensure filling is cool to avoid soggy dough.

Seal edges tightly to prevent leaks.

You can make 8 smaller buns instead of 6 for parties.

Internal temp of 190°F ensures perfectly baked centres.
