1 tablespoon (14 g) unsalted butter

1 tablespoon (8 g) all-purpose flour

1 cup (240 ml) whole milk, plus more as needed

1 teaspoon (5 ml) spicy brown mustard

½ teaspoon (2.5 ml) Worcestershire sauce

½ teaspoon (1.5 g) garlic powder

½ teaspoon (3 g) salt

2 cups (170 g) shredded extra-sharp Cheddar cheese
Instructions

In a small saucepan, melt the butter over medium heat.

Whisk in the flour to form a thick paste and stir for 30–60 seconds.

Slowly whisk in the milk. Add mustard, Worcestershire sauce, garlic powder, and salt.

Stir continuously for 3–4 minutes until thickened and bubbling.

Remove from heat and stir in shredded cheese gradually until melted.

If the sauce gets too thick, add a splash of warm milk to loosen it.
Notes
Use freshly shredded cheese for the smoothest melt.
Keep heat moderate to avoid grainy texture.
Store leftovers in the fridge up to 4 days or freeze for later.
