Description

Moist carrot muffins filled with shredded carrots, apple, raisins, and warm cinnamon. These easy homemade muffins make a comforting breakfast, brunch treat, or afternoon snack.


Ingredients

  • 2 cups all-purpose flour
  • 3 teaspoons baking powder
  • 2 teaspoons ground cinnamon
  • ½ teaspoon salt
  • 1 cup granulated sugar
  • 1 cup vegetable oil
  • 3 large eggs
  • 2 cups shredded carrots
  • 1 apple, peeled and shredded
  • ½ cup raisins

Instructions

  1. Preheat the oven to 375°F. Grease a standard 12-cup muffin pan or line it with parchment muffin liners.
  2. Whisk the flour, baking powder, cinnamon, and salt together in a large mixing bowl.
  3. Whisk the granulated sugar, vegetable oil, and eggs together in a separate bowl until smooth.
  4. Pour the wet mixture into the dry mixture and stir gently just until nearly combined.
  5. Fold in the shredded carrots, shredded apple, and raisins until evenly distributed. Do not overmix.
  6. Divide the batter evenly among the 12 prepared muffin cups.
  7. Bake for 25 to 29 minutes, or until the tops are golden and a toothpick inserted in the center comes out clean or with a few moist crumbs.
  8. Cool the muffins in the pan for 5 minutes, then transfer them to a wire rack.

Notes

  1. Measure the flour by spooning it into the measuring cup and leveling the top to prevent dry muffins.
  2. Use freshly shredded carrots for the softest texture.
  3. Do not overmix the batter after adding the wet ingredients.
  4. Store fully cooled muffins in a zippered bag or airtight container at room temperature for up to 5 days.
  5. Place a slice of bread in the storage container to help absorb excess moisture.
  6. Freeze fully cooled muffins in a freezer-safe zippered bag for up to 3 months.
  7. Thaw at room temperature or warm one muffin in the microwave for 10 to 15 seconds.
