Description

Easy carrot cake bars with warm spices, fresh carrots, and cream cheese frosting. Moist, tender, and perfect for any occasion.


Ingredients

  • 3/4 cup avocado oil
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 3 eggs
  • 1/2 tablespoon vanilla extract
  • 1 2/3 cups all-purpose flour
  • 1 1/2 teaspoons ground cinnamon
  • 1 teaspoon baking soda
  • 1 teaspoon fine sea salt
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon ground nutmeg
  • Pinch ground cloves
  • 8 ounces finely grated fresh carrots
  • Optional 1/2 cup chopped nuts
  • Optional 1/4 cup raisins
  • 8 ounces cream cheese softened
  • 2 tablespoons butter softened
  • 1 teaspoon vanilla extract
  • 3 cups sifted powdered sugar

Instructions

  1. Preheat oven to 350°F and grease a 9×9-inch baking dish.
  2. Whisk oil, granulated sugar, and brown sugar until smooth.
  3. Add eggs and vanilla and whisk until combined.
  4. Whisk flour, cinnamon, baking soda, salt, baking powder, nutmeg, and cloves in a separate bowl.
  5. Mix dry ingredients into wet ingredients until smooth.
  6. Fold in grated carrots and optional nuts or raisins.
  7. Spread batter evenly in prepared pan.
  8. Bake for 35 to 40 minutes until a toothpick comes out clean.
  9. Cool completely on a wire rack.
  10. Beat cream cheese, butter, and vanilla until smooth.
  11. Gradually mix in powdered sugar until frosting is smooth.
  12. Spread frosting over cooled bars.
  13. Slice and serve.

Notes

  1. Store in an airtight container in the refrigerator for up to 3 days.
  2. Finely grate carrots for the best texture.
  3. Optional nuts or raisins may be added to the batter.
  4. Cool completely before frosting.
