Description

This carrot apple salad is crisp, lightly sweet, and creamy with a simple dressing. It comes together in minutes and works perfectly as a refreshing side dish.


Ingredients

  • 4 medium carrots, coarsely grated
  • 1 apple, diced
  • 3/4 cup dried cranberries
  • 1/4 cup purple or sweet onion, finely diced
  • 1/2 cup mayonnaise or vegenaise
  • 2 teaspoons lemon juice
  • 1/2 tablespoon sugar
  • 1/8 teaspoon sea salt
  • Pinch of black pepper

Instructions
