Rich, creamy Caramel Apple Cheesecake Bars combining tart apples, smooth cheesecake, and buttery crust with caramel drizzle.
Ingredients
For the Crust:
2 cups graham cracker crumbs
½ cup unsalted butter, melted
¼ cup granulated sugar
¼ tsp cinnamon
For the Cheesecake Layer:
16 oz cream cheese, softened
½ cup granulated sugar
2 large eggs
1 tsp vanilla extract
For the Apple Layer:
3 medium Granny Smith apples, peeled and diced
2 tbsp lemon juice
¼ cup brown sugar
1 tsp cinnamon
¼ tsp nutmeg
For the Streusel Topping:
½ cup all-purpose flour
¼ cup brown sugar
¼ cup unsalted butter, cubed
¼ cup chopped pecans
For the Caramel Sauce:
1 cup sugar
¼ cup water
½ cup heavy cream
2 tbsp butter
¼ tsp salt
Instructions
1. Preheat oven to 350°F. Line a 9×13 inch pan with parchment.
2. Mix crust ingredients, press into pan, bake 10 minutes.
3. Beat cream cheese and sugar; add eggs and vanilla.
4. Pour over crust.
5. Toss apples with lemon juice, sugar, and spices. Layer over cheesecake.
6. Mix flour, sugar, butter, and pecans for streusel; sprinkle on top.
7. Bake 45–50 minutes until golden.
8. Cool completely, refrigerate 2 hours.
9. Make caramel: cook sugar and water to amber, whisk in cream, butter, salt.
10. Drizzle over chilled bars before serving.
Notes
For crisp crust, pre-bake 10 minutes. Use room-temp cream cheese.
Store chilled up to 5 days; freeze up to 3 months.
