Description

A creamy and hearty Cajun Potato Soup made with smoky sausage, tender potatoes, and bold Southern spices.


Ingredients

  • 1 tablespoon vegetable oil
  • 1 ring andouille sausage, sliced
  • 1 large onion, diced
  • 1/2 cup celery, diced
  • 1/2 cup red bell pepper, diced
  • 2 teaspoons garlic, minced
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper
  • 4 cups chicken broth
  • 4 large russet potatoes, peeled and cubed
  • 1/2 cup heavy whipping cream
  • 1 cup mild cheddar cheese, shredded
  • Parsley, chopped

Instructions

  1. Heat oil in a large pot over medium heat and brown sausage.
  2. Remove sausage and cook onion, celery, and bell pepper until soft.
  3. Add garlic and spices, then stir well.
  4. Pour in broth and add potatoes, then simmer until tender.
  5. Stir in cream and cheese until smooth.
  6. Return sausage and cook briefly before serving.

Notes

  1. Soup tastes better the next day.
  2. Adjust spice level to taste.
  3. Reheat gently to keep texture smooth.
