Description
Creamy, smoky Cajun Corn On The Cob baked until tender and finished with cheese, lime, and fresh herbs.
Ingredients

- 4 ears corn, husked
- 2 tablespoons olive oil
- Salt and black pepper to taste
- 4 tablespoons mayonnaise
- 1/3 cup sour cream or Mexican crema
- 1 1/2 teaspoons Cajun spice, divided
- 1 1/2 teaspoons smoked paprika, divided
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 tablespoon cilantro, chopped
- 1/2 cup feta or cotija cheese, crumbled
- 1 tablespoon lime juice
- 1 teaspoon chipotle or chili powder (optional)
Instructions
- Preheat oven to 425°F and prepare foil sheets.
- Mix olive oil with half the Cajun spice, half the paprika, garlic powder, onion powder, salt, and pepper.
- Brush corn with oil mixture, wrap in foil, and bake for 30 minutes.
- Bake longer if needed until corn is tender.
- Mix mayonnaise, sour cream, remaining spices, lime juice, salt, and pepper.
- Brush baked corn with mayo sauce and top with cheese and cilantro before serving.
Notes
- Vegan mayo works well in this recipe.
- For light charring, finish the corn briefly on a grill pan.
- Adjust spice level to taste.
