Description

Creamy, smoky Cajun Corn On The Cob baked until tender and finished with cheese, lime, and fresh herbs.


Ingredients

Scale
  • 4 ears corn, husked
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • 4 tablespoons mayonnaise
  • 1/3 cup sour cream or Mexican crema
  • 1 1/2 teaspoons Cajun spice, divided
  • 1 1/2 teaspoons smoked paprika, divided
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 tablespoon cilantro, chopped
  • 1/2 cup feta or cotija cheese, crumbled
  • 1 tablespoon lime juice
  • 1 teaspoon chipotle or chili powder (optional)

Instructions

  1. Preheat oven to 425°F and prepare foil sheets.
  2. Mix olive oil with half the Cajun spice, half the paprika, garlic powder, onion powder, salt, and pepper.
  3. Brush corn with oil mixture, wrap in foil, and bake for 30 minutes.
  4. Bake longer if needed until corn is tender.
  5. Mix mayonnaise, sour cream, remaining spices, lime juice, salt, and pepper.
  6. Brush baked corn with mayo sauce and top with cheese and cilantro before serving.

Notes

  1. Vegan mayo works well in this recipe.
  2. For light charring, finish the corn briefly on a grill pan.
  3. Adjust spice level to taste.
