- 2 tablespoons butter
- 1/2 cup chopped onion
- 1/2 cup chopped celery
- 1/2 cup chopped bell pepper
- 4 cloves garlic, minced
- 2 tablespoons Cajun seasoning, divided
- 2 cups chicken stock
- 1 (14.5-ounce) can diced tomatoes, undrained
- 1 pound boneless, skinless chicken breasts, sliced thin
- 1 tablespoon neutral oil
- 1 cup heavy cream or half-and-half
- Chopped green onions, optional garnish
Instructions
- Heat Dutch oven and melt butter.
- Sauté onion, celery, and bell pepper 5 minutes.
- Add garlic and 1 tablespoon Cajun seasoning.
- Pour in chicken stock and diced tomatoes and simmer.
- Season chicken with remaining Cajun seasoning.
- Cook chicken in oiled skillet 3 to 5 minutes per side.
- Chop cooked chicken into bite-sized pieces.
- Reduce heat and stir cream into soup.
- Add chicken and simmer 3 to 5 minutes.
- Adjust seasoning and serve with green onions.
Notes
- Do not boil after adding cream to prevent separation.
- Adjust Cajun seasoning to control spice level.
- Store leftovers refrigerated up to 3 days.
