Description
Cabbage Roll Soup is a warm and hearty one-pot meal filled with cabbage, beef, rice, and tomato broth. It tastes like classic cabbage rolls without the long prep time.
Ingredients
2 tsp vegetable oil
1 lb lean ground beef
salt and pepper
1 medium yellow onion, finely diced
2 cloves garlic, minced
4 cups chopped green cabbage
2 medium carrots, quartered and sliced
4 cups low-sodium beef broth
3 cans (8 oz each) tomato sauce
1/2 cup white rice, uncooked
1 bay leaf
3 tbsp light brown sugar
2 tbsp fresh chopped parsley
Instructions
1. Heat oil in a dutch oven over medium-high heat and add ground beef.
2. Season with salt and pepper and cook until browned.
3. Add onion and garlic; cook 2–3 minutes until onions soften.
4. Stir in cabbage, carrots, tomato sauce, broth, rice, bay leaf, and brown sugar.
5. Bring to a simmer and cook 25 minutes until rice is tender.
6. Remove bay leaf and top with parsley.
Notes
You can adjust sweetness by reducing brown sugar.
For a thicker soup, allow it to simmer longer.
Leftovers taste richer the next day.
