Cupcakes:

  • 1½ cups all-purpose flour

  • 1½ tsp baking powder

  • ¼ tsp salt

  • ½ cup unsalted butter (browned)

  • ½ cup granulated sugar

  • ½ cup brown sugar, packed

  • 2 large eggs

  • 1 tsp vanilla extract

  • ½ cup milk or buttermilk

  • ¾ cup toasted pecans, chopped

Frosting (choose one):
Brown Butter Frosting:

  • ½ cup unsalted butter (browned)

  • 2½ cups powdered sugar

  • 1 tsp vanilla extract

  • 23 tbsp milk or cream

Cream Cheese Frosting (optional alternative):

  • ½ cup unsalted butter, softened

  • 8 oz cream cheese, softened

  • 2½ cups powdered sugar

  • 1 tsp vanilla extract


Instructions

  1. Toast the Pecans: In a skillet over medium heat, toast chopped pecans in a little butter until golden. Let cool.

  2. Brown the Butter: Melt butter in a pan. Stir until it turns golden brown and smells nutty. Cool before using.

  3. Make the Batter:

    • Preheat oven to 350°F (175°C). Line cupcake tray with liners.

    • In one bowl, whisk flour, baking powder, and salt.

    • In another bowl, beat browned butter, granulated sugar, and brown sugar until fluffy.

    • Add eggs one at a time. Stir in vanilla.

    • Add dry mix and milk in turns. Stir gently.

    • Fold in toasted pecans.

  4. Bake:

    • Fill liners 2/3 full.

    • Bake for 18–22 minutes or until a toothpick comes out clean.

    • Cool completely before frosting.

  5. Make the Frosting:

    • Beat browned or softened butter with powdered sugar and vanilla. Add milk to reach smooth texture.

    • If using cream cheese frosting, beat cream cheese and butter together first, then add sugar and vanilla.

  6. Frost & Decorate: Pipe or spread frosting. Top with pecan halves, drizzle caramel, or sprinkle with cinnamon sugar if desired.

Notes

Store frosted cupcakes in an airtight container at room temp for 2 days, or in the fridge for 5 days.

Freeze unfrosted cupcakes for up to 2 months.

Great with coffee, chai, or a glass of milk.
