Ingredients

  • 2 flatbreads (about 14.5 oz / 410 g total)

  • 2 tsp (10 ml) light olive oil

  • ½ cup (120 ml) buffalo wing sauce (adjust to taste)

  • 1½ cups (225 g) cooked chicken, diced

  • 1 cup (113 g) shredded mozzarella cheese

  • ⅓ cup (80 ml) blue cheese dressing

  • ⅓ cup (30 g) sliced green onions

Optional toppings:

  • Extra buffalo sauce or ranch drizzle

  • Thinly sliced celery for crunch


Instructions

  • Preheat the oven: Set to 425°F (220°C). Line a baking sheet with parchment paper.

  • Prep the base: Place flatbreads on the sheet and lightly brush edges with olive oil. Bake for 5 minutes to crisp slightly.

  • Add the flavor: Spread buffalo wing sauce evenly across the flatbreads.

  • Top it up: Add diced chicken, sprinkle with mozzarella, and drizzle blue cheese dressing over the top.

  • Bake: Return to the oven for 12–15 minutes until cheese is melted and bubbly.

  • Broil: Optional—broil for 1–2 minutes for extra crispiness.

Notes

Rotisserie chicken makes prep even faster.

For a milder version, mix buffalo sauce with ranch or creamy garlic dressing.

Naan or pita can be used as substitutes for flatbread.

Add fresh celery slices after baking for extra crunch.
