Description

Buffalo Chicken Cucumber Rolls are spicy, crisp, low-carb bites made with thin cucumber ribbons, shredded chicken, buffalo sauce, mayonnaise, celery, red onion, and fresh herbs. They make a quick no-cook appetizer, snack, or light lunch.


Ingredients

  • 1 large cucumber
  • 1/2 cup cooked shredded chicken
  • 1/4 cup buffalo sauce
  • 1/4 cup mayonnaise
  • 1/4 cup diced celery
  • 1/4 cup diced red onion
  • Salt and black pepper, to taste
  • Fresh chives, for garnish
  • Fresh dill, for garnish

Instructions

  1. Wash and dry the cucumber well.
  2. Use a vegetable peeler or mandoline slicer to slice the cucumber into 6 or 7 long, thin strips.
  3. Pat the cucumber strips dry with paper towels to remove extra moisture.
  4. Arrange the cucumber strips side by side on a cutting board, slightly overlapping the edges.
  5. Spread the mayonnaise evenly across the cucumber strips.
  6. Arrange the shredded chicken diagonally across the mayonnaise-covered cucumber.
  7. Add the buffalo sauce, diced celery, and diced red onion over the chicken.
  8. Season with salt and black pepper to taste.
  9. Roll the cucumber strips tightly around the filling.
  10. Secure the rolls with toothpicks to help them hold their shape.
  11. Arrange the rolls on a plate.
  12. Garnish with fresh chives and dill before serving.

Notes

  1. Choose firm cucumbers with no soft spots so the rolls hold their shape.
  2. Use precooked shredded chicken, rotisserie chicken, leftover grilled chicken, canned chicken, or batch-cooked chicken to save time.
  3. Roll the cucumber strips tightly without tearing them.
  4. Chill the rolls for 30 minutes before serving for the best texture and flavor.
  5. Use toothpicks if the rolls need help staying closed, then remove them before serving if desired.
  6. Store leftovers in an airtight container in the refrigerator for up to 24 hours with paper towels to absorb moisture.
