Description

Browned Butter Lemon Dill Pasta made with bucatini, fresh lemon, dill, and Parmesan for a quick spring dish.


Ingredients

Scale
  • 1 lb pasta (bucatini or similar)
  • 6 tablespoons unsalted butter, divided
  • 1/4 cup freshly grated Parmesan cheese
  • 1 medium lemon, zested and juiced
  • 3 tablespoons minced fresh dill
  • Kosher salt
  • Freshly ground black pepper

Instructions

  1. Boil pasta in salted water until nearly al dente and reserve 2 cups pasta water.
  2. Melt 4 tablespoons butter in a skillet until golden brown.
  3. Add 1 cup pasta water and remaining butter, stirring until creamy.
  4. Add pasta, Parmesan, lemon juice, and zest, cooking until sauce thickens.
  5. Remove from heat, stir in dill, and season with salt and pepper.

Notes

  1. Do not overcook the pasta.
  2. Watch butter closely while browning.
