Description
Brown Sugar Pineapple Chicken is a sweet, tangy, skillet-cooked dinner that comes together fast and delivers bold flavor with simple ingredients.
Ingredients
4 boneless, skinless chicken breasts
1 cup brown sugar, packed
1 cup fresh pineapple chunks (or canned)
1/2 cup soy sauce
1/4 cup ketchup
1 tablespoon minced garlic
1 teaspoon ground ginger
Salt and pepper to taste
2 tablespoons vegetable oil
Chopped fresh cilantro for garnish
Instructions
1. Season the chicken breasts with salt and pepper.
2. Heat the vegetable oil in a large skillet over medium-high heat.
3. Sear the chicken for 4–5 minutes per side until golden. Remove and set aside.
4. Add brown sugar, soy sauce, ketchup, garlic, and ginger to the skillet and stir.
5. Add pineapple chunks and mix.
6. Return chicken to the skillet and coat in the sauce.
7. Reduce heat to low, cover, and simmer 20–25 minutes.
8. Check that chicken reaches 165°F.
9. Garnish with cilantro.
10. Serve with sauce over rice or sides.
Notes
You can use canned pineapple if needed.
Cut chicken into chunks for quicker cooking.
Add red pepper flakes for heat.
