Description

A warm old school Brown Sugar Peach Cobbler made with fresh peaches, brown sugar batter, cinnamon, vanilla, and a rich maple butter drizzle.

Ingredients

Scale
  • 1 stick salted butter, cubed
  • 1 cup all-purpose flour
  • 1 cup light or dark brown sugar, divided
  • 2 teaspoons baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon kosher salt
  • 1 cup milk
  • 1 tablespoon vanilla extract
  • 5 to 6 peaches, cut into 8 wedges each
  • 2 tablespoons maple syrup
  • 4 tablespoons salted butter, for maple butter
  • 1/4 cup maple syrup, for maple butter

Instructions

  1. Preheat the oven to 375°F.
  2. Place the cubed stick of salted butter in a 9×13-inch baking dish and set the dish in the oven for about 10 minutes, or until the butter melts.
  3. In a mixing bowl, stir together the flour, 3/4 cup brown sugar, baking powder, cinnamon, and kosher salt.
  4. Add the milk and vanilla, then stir just until the batter comes together.
  5. In a separate bowl, toss the peach wedges with the remaining 1/4 cup brown sugar and 2 tablespoons maple syrup.
  6. Carefully remove the hot baking dish from the oven and layer half of the peaches over the melted butter.
  7. Pour the batter evenly over the peaches, but do not stir.
  8. Layer the remaining peaches over the batter.
  9. Bake for 50 to 55 minutes, or until the center is set and the edges are golden brown.
  10. Meanwhile, combine 4 tablespoons salted butter and 1/4 cup maple syrup in a small saucepan.
  11. Bring the maple butter to a boil and cook for 2 minutes, then remove it from the heat.
  12. Serve the cobbler warm or at room temperature with vanilla ice cream and a drizzle of maple butter.

Notes

  1. Do not stir the batter into the melted butter after pouring it into the baking dish.
  2. Use ripe but firm peaches for the best texture.
  3. Dark brown sugar gives the cobbler a deeper caramel flavor.
  4. Store leftovers covered in the refrigerator for up to 4 days.
  5. Reheat portions in the microwave or in a 325°F oven until warm.
