Description

A colorful and refreshing bow tie pasta salad with pesto, basil, and fresh vegetables. Perfect for BBQs, parties, or meal prep.


Ingredients

  • 12 ounces (4 cups) bow tie pasta, dry

  • 2 cups cherry tomatoes, halved

  • 1/4 cup red onion, diced

  • 1 cup bocconcini cheese, halved

  • 1 cup spinach, packed, finely chopped

  • 1/2 cup basil, finely chopped

  • 3 tablespoons pesto

  • 2 tablespoons olive oil

  • 1/2 lemon, juiced

  • Salt

  • Black pepper


Instructions

  • Fill a large pot with water, bring to a boil, and cook the bow tie pasta in heavily salted water as per package directions or until slightly past al dente. Drain and toss with olive oil.

  • Prepare the dressing by whisking pesto, olive oil, and lemon juice in a small bowl.

  • Combine cooled pasta with cherry tomatoes, onion, bocconcini, spinach, and basil in a large bowl.

  • Pour dressing over the pasta salad, season with salt and pepper, and toss gently until evenly coated.

  • Serve immediately or refrigerate for up to 5 days.

Notes

To make it dairy-free, omit the cheese or use vegan mozzarella. For a protein boost, add grilled chicken or chickpeas.
