Description

These homemade blueberry oatmeal crumble bars are the perfect balance of sweet and tart, with a chewy, crumbly texture. Made with fresh or frozen blueberries, oats, and a buttery crumble topping, they make a great breakfast, snack, or dessert.


Ingredients

  • 2 cups fresh or frozen blueberries

  • 1 ½ cups old-fashioned oats

  • 1 cup all-purpose flour (or gluten-free flour blend)

  • ¾ cup brown sugar (packed)

  • ½ cup granulated sugar

  • 1 tsp cinnamon (optional)

  • 1 pinch salt

  • 1 cup unsalted butter (melted)

  • 1 tbsp lemon juice

  • 1 tsp lemon zest

  • 1 tbsp cornstarch (or arrowroot powder)

  • Optional: ¼ cup chopped walnuts or almonds (for added crunch)


Instructions

  • Preheat your oven to 350°F (175°C). Line a 9×9-inch baking pan with parchment paper, letting the edges hang over for easy removal.

  • In a large bowl, combine oats, flour, brown sugar, cinnamon, and salt. Stir to combine.

  • Add melted butter to the oat mixture and stir until it forms a crumbly texture.

  • Press about two-thirds of the crumble mixture into the bottom of the prepared pan to form the crust.

  • In a separate bowl, toss the blueberries with granulated sugar, cornstarch, lemon juice, and zest.

  • Spread the blueberry mixture evenly over the crust.

  • Sprinkle the remaining crumble mixture over the blueberries.

  • Bake for 40-45 minutes or until the top is golden and the filling is bubbling.

  • Let the bars cool completely before lifting them out of the pan using the parchment paper. Cut into squares.

Notes

You can substitute the blueberries with raspberries or mixed berries for variety.

For a dairy-free version, use plant-based butter.

Store leftovers in an airtight container for up to 3 days at room temperature or refrigerate for up to 1 week.
