Description

Soft and chewy blueberry cookies with white chocolate chunks and a creamy cheesecake filling.


Ingredients

Scale
  • 1 1/2 cups flour
  • 1 teaspoon cornstarch
  • 1/4 teaspoon salt
  • 3/4 teaspoon baking powder
  • 1/2 cup unsalted butter
  • 3/4 cup sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 4 oz white chocolate
  • 3/4 cup blueberries
  • 2.5 oz cream cheese
  • 1 tablespoon powdered sugar
  • 1/2 teaspoon vanilla
  • 34 tablespoons blueberry jam

Instructions

  1. Whisk dry ingredients together.
  2. Cream butter and sugar, then add egg and vanilla.
  3. Mix in dry ingredients.
  4. Fold in chocolate and blueberries.
  5. Chill dough for 2 hours.
  6. Prepare filling with cream cheese mixture.
  7. Preheat oven to 350F.
  8. Fill cookie dough with cream cheese and jam.
  9. Roll into balls and freeze briefly.
  10. Bake 16-18 minutes and cool.

Notes

  1. Do not overmix the dough.
  2. Chill dough properly.
  3. Use fresh blueberries for best results.
