Description

Creamy Blackened Shrimp Stroganoff with Cajun-spiced shrimp, mushrooms, and pasta.


Ingredients

Scale
  • 1 pound shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 tablespoon Cajun seasoning
  • 6 ounces fettuccini pasta
  • 1 tablespoon butter
  • 3 cups mushrooms, sliced
  • 1 tablespoon chopped shallots
  • 1 2/3 cups chicken broth
  • 1/2 cup sour cream
  • 1 tablespoon cornstarch
  • 1 jar roasted red bell peppers, chopped
  • 1 tablespoon capers

Instructions

  1. Season shrimp with olive oil and Cajun seasoning
  2. Cook pasta until al dente and drain
  3. Sauté mushrooms and shallots in butter and remove
  4. Cook shrimp until pink and remove
  5. Reduce broth, add sour cream mixture, and thicken
  6. Return shrimp and vegetables to pan and heat through
  7. Serve over pasta

Notes

  1. Do not overcook shrimp
  2. Adjust Cajun seasoning to taste
  3. Add broth to loosen sauce if needed
