Description

Birthday Cake Sugar Cookies are soft, chewy, and packed with white chocolate chips and rainbow sprinkles for a festive treat.


Ingredients

  • 3/4 cup brown sugar
  • 3/4 cup granulated sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 1/2 cups white cake mix
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/4 cups white chocolate chips
  • 1/2 cup rainbow sprinkles

Instructions

  1. Preheat oven to 350°F and line baking sheets with parchment paper
  2. Whisk together flour, cake mix, baking soda, and salt
  3. Beat butter and sugars until light and fluffy
  4. Add eggs and vanilla extract and mix well
  5. Gradually mix in dry ingredients until combined
  6. Fold in white chocolate chips and sprinkles
  7. Chill dough for 1 hour
  8. Scoop dough balls and place on baking sheets
  9. Add extra chips and sprinkles on top
  10. Bake for 10 minutes until edges are golden
  11. Tap pan for crinkled tops and cool
