Ingredients
-
4 boneless, skinless chicken breasts
-
1 cup grated Parmesan cheese
-
1 cup Italian-style breadcrumbs
-
1 tsp garlic powder
-
1 tsp onion powder
-
1 tsp dried Italian herbs (oregano, basil, thyme)
-
Salt and pepper, to taste
-
2 large eggs
-
1 tbsp olive oil
-
Fresh parsley, chopped (optional garnish)
Instructions
-
Prep: Preheat oven to 400°F (200°C). Grease or line a baking sheet with parchment.
-
Mix coating: In a shallow bowl, combine Parmesan, breadcrumbs, garlic powder, onion powder, Italian herbs, salt, and pepper.
-
Whisk eggs: In another bowl, beat eggs until smooth.
-
Coat chicken: Dip each chicken breast in eggs, then dredge in the Parmesan-breadcrumb mixture. Press lightly to help the coating stick.
-
Arrange & drizzle: Place coated chicken on the baking sheet. Drizzle olive oil over the tops.
-
Bake: Bake for 25–30 minutes or until golden and internal temperature reaches 165°F (74°C).
-
Rest & serve: Let rest for 5 minutes. Garnish with parsley and serve hot.
Notes
Pound chicken to even thickness for faster, uniform cooking.
Don’t skip the olive oil drizzle—it ensures crispy edges.
Breadcrumb substitutes: crushed crackers or cornflakes work well.
For extra crunch, try air frying at 375°F (190°C) for 18–20 minutes, flipping halfway.
