Ingredients

1/2 cup unsalted butter, at room temperature

1 cup granulated sugar

1 large egg, at room temperature

1 1/2 teaspoon vanilla extract

1/4 teaspoon almond extract

1 3/4 cup all-purpose flour

1/2 teaspoon salt
Instructions

In a stand mixer combine butter and sugar, beat 45 seconds.

Add egg, vanilla, and almond extract; mix 1 minute.

Add flour and salt; combine just until mixed.

Form a flat oval disk, wrap in plastic, and chill 1 hour.

Preheat oven to 350°F, line 2 baking sheets.

Roll dough 1/4 inch thick; cut shapes.

Bake 8–12 minutes until edges are golden.

Cool completely before frosting or serving.
Notes
Use room-temperature butter for smooth texture.
Don’t overmix the dough or it’ll toughen.
Chill at least 1 hour to prevent spreading.
Flour surfaces well when rolling out.
Freeze trays before baking for perfect shapes.
