Description

Berry spinach salad with fresh strawberries, raspberries, blueberries, goat cheese, pecans, and a sweet raspberry vinaigrette. Ready in just 5 minutes.


Ingredients

  • 6 cups baby spinach
  • 1 cup strawberries, halved
  • 1/2 cup raspberries
  • 1/2 cup blueberries
  • 1/3 cup goat cheese, crumbled
  • 1/3 cup red onion, thinly sliced
  • 1/4 cup pecans, roughly chopped
  • 1/2 recipe raspberry vinaigrette

Instructions

  1. Wash and dry the baby spinach and prepare all fruit and toppings.
  2. Add spinach, strawberries, raspberries, blueberries, red onion, goat cheese, and pecans to a large bowl.
  3. Drizzle with raspberry vinaigrette, toss gently, and serve immediately.

Notes

  1. This salad tastes best fresh.
  2. For advance prep, store ingredients separately and toss just before serving.
