Ingredients

2 racks (about 1.8 kg) pork ribs, membrane removed

1 tablespoon steak seasoning

1 cup water (more as needed)

1/2 cup barbecue sauce (your choice)
Instructions

Preheat grill to 250°F (low heat).

Cut rib racks in half. Rub all sides with steak seasoning.

Place ribs bone-side down in a large foil pan. Add about 1 cm of water to the bottom. Cover tightly with foil.

Grill with the lid closed for 1.5 to 2.5 hours, checking hourly and adding hot water if needed.

Uncover ribs and brush with barbecue sauce.

Grill uncovered for 30 minutes more, allowing the sauce to caramelize.

Ensure internal temperature reaches 145°F. Serve hot.
