Description

Crowd-pleasing, cheesy BBQ Chicken Sliders made with sweet Hawaiian rolls, juicy rotisserie chicken tossed in tangy BBQ sauce, and melty Gouda or Cheddar cheese. Brushed with garlic-herb butter and baked until golden, these sliders are perfect for parties, game nights, or quick family dinners.

Ingredients

Scale
  • 12 Hawaiian sweet dinner rolls

  • 3 cups shredded or chopped rotisserie chicken

  • 1 cup BBQ sauce

  • 8 oz thinly sliced Gouda or sharp Cheddar (12 slices)

  • ⅓ cup diced red onion (optional)

  • 2 tbsp chopped cilantro (optional)

  • 4 tbsp garlic-herb butter

  • 1 tbsp grated Parmesan (optional)

Instructions

  1. Preheat oven to 400°F (200°C) and grease a 9×13-inch baking pan.

  2. Slice Hawaiian rolls in half horizontally, keeping slabs intact. Place the bottom slab in the pan.

  3. Toss chicken with BBQ sauce until coated.

  4. Layer half the cheese on the rolls, then spread BBQ chicken on top.

  5. Sprinkle with onion and cilantro (if using), then layer remaining cheese.

  6. Place the top slab of rolls over the filling.

  7. Melt garlic-herb butter and brush over tops and sides, letting some drip underneath.

  8. Sprinkle Parmesan on top (if using).

  9. Cover with foil and bake 20 minutes. Remove foil and bake 3–6 more minutes, until tops are golden and cheese is bubbling.

  10. Slice and serve hot.

Notes

Don’t skip the butter glaze—it creates shiny, crispy tops.

Use your favorite BBQ sauce: sweet, smoky, or spicy.

Cheese options: Gouda for creaminess, Cheddar for a sharper bite, or Pepper Jack for heat.

Make ahead: Assemble earlier, refrigerate, and bake when ready (add a few extra minutes).

Leftovers can be stored in the fridge for 3–4 days or frozen for up to 2 months. Reheat at 350°F for 10–12 minutes.

Food safety: if you cook the chicken yourself, make sure it reaches an internal temperature of 165°F (74°C), as recommended by the USDA and Health Canada.
