  • 1 lb cooked, shredded chicken breast

  • 1 tbsp olive oil

  • 8 oz elbow macaroni or pasta of choice

  • 2 cups shredded cheddar cheese

  • 1 cup shredded mozzarella cheese

  • 1 cup low-fat milk

  • ½ cup BBQ sauce (your favorite brand)

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • ½ tsp smoked paprika

  • Salt and pepper to taste

  • Fresh parsley, chopped (optional)


Instructions

  • Cook macaroni according to package directions. Drain and set aside.

  • In a large skillet, heat olive oil over medium heat. Add shredded chicken and cook for 2–3 minutes.

  • Stir in BBQ sauce, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix until well coated.

  • In a separate saucepan, heat milk over medium. Gradually stir in cheddar and mozzarella until melted and smooth.

  • Stir pasta into the cheese sauce. Fold in the BBQ chicken mixture.

  • Serve hot, topped with chopped parsley if desired.

Notes

Use rotisserie chicken to save time.

For a baked version, broil topped with extra cheese for 3–5 minutes.

Add-ins like corn, onions, or jalapeños enhance flavor.

Reheat with a splash of milk to maintain creaminess.
