Description

BBQ Chicken Grilled Cheese Sandwiches feature crispy garlic butter bread filled with smoky BBQ chicken and creamy melted Havarti cheese for a rich and satisfying comfort food meal.


Ingredients

  • 2 tablespoons olive oil
  • 1 small red onion, thinly sliced
  • 3 cloves garlic, minced
  • 2 1/2 cups shredded roasted chicken
  • 1/2 teaspoon paprika
  • 1 teaspoon Worcestershire sauce
  • 1 cup BBQ sauce
  • 12 slices Havarti cheese
  • 1/4 cup butter
  • 2 cloves garlic, minced
  • 2 teaspoons parsley, minced
  • 12 slices sourdough bread

Instructions

  1. Heat olive oil in a large skillet over medium heat and cook sliced onions until soft about 2 minutes
  2. Add minced garlic and cook until fragrant about 30 seconds
  3. Stir in shredded chicken paprika Worcestershire sauce and BBQ sauce then cook until heated through about 2 to 3 minutes
  4. In a bowl combine butter minced garlic and parsley then microwave until melted
  5. Lay bread slices on a work surface and spread the garlic butter mixture over each slice
  6. Flip bread over and place Havarti cheese on six slices then add the BBQ chicken mixture evenly
  7. Top chicken with remaining cheese slices and cover with the remaining bread slices buttered side facing outward
  8. Cook sandwiches in a large skillet over medium heat for 3 to 5 minutes until golden brown
  9. Flip sandwiches reduce heat to medium low and cook another 3 to 5 minutes until bread is crisp and cheese melts

Notes

  1. Use sturdy sourdough or thick white bread so the sandwich holds the filling
  2. Rotisserie chicken works well and saves preparation time
  3. Cook over medium heat to avoid burning the bread before the cheese melts
