Description

These Bang Bang Salmon Bites are crispy, golden cubes of seasoned salmon coated in panko breadcrumbs and paired with a creamy-spicy Bang Bang sauce. Served over rice with fresh veggies, they’re a healthy, fast, and flavour-packed meal perfect for busy weeknights or meal prep.

For the Salmon Bites:

  • 1 lb fresh salmon, skinless and cubed

  • 1 tsp garlic powder

  • 1 tsp smoked paprika

  • ½ tsp salt

  • ½ tsp black pepper

  • 1 cup panko breadcrumbs

  • 1 tbsp olive oil or cooking spray

For the Bang Bang Sauce:

  • ½ cup mayonnaise

  • 2 tbsp sweet chili sauce

  • 1 tbsp sriracha (or more to taste)

  • 1 tsp honey (optional)

  • Juice of ½ lime

For the Bowls:

  • 2 cups cooked jasmine or cauliflower rice

  • 1 cup shredded purple cabbage

  • 1 avocado, sliced

  • ½ cup shredded carrots

  • 2 green onions, sliced

  • Fresh cilantro and sesame seeds for garnish


Instructions

  • Preheat oven to 400°F or air fryer to 390°F.

  • Season the cubed salmon with garlic powder, smoked paprika, salt, and pepper. Toss well to coat.

  • Coat salmon pieces in panko, pressing gently. Spray with olive oil.

  • Bake for 12–14 minutes on a parchment-lined tray, or air fry for 8–10 minutes, flipping halfway.

  • Whisk all sauce ingredients together until smooth.

  • Assemble bowls: start with rice, then cabbage, carrots, avocado. Top with salmon bites, drizzle sauce, and garnish with green onions, cilantro, and sesame seeds.

Notes

For ultra-crispy bites, bake on a wire rack.

Air frying saves time but don’t overcrowd.

Sauce can be prepped ahead and kept refrigerated up to 1 week.

For a lighter sauce, use Greek yogurt for half the mayo.

Great for meal prep—just store sauce separately.
