Description
Bang Bang Fried Rice is a quick 30 minute dinner made with juicy chicken, fluffy eggs, vegetables, and a creamy spicy sweet bang bang sauce. This one pan meal delivers bold flavor and works perfectly for busy weeknight dinners.

- 1 1/2 cups cooked rice (preferably day-old)
- 1 chicken breast, diced
- 2 eggs, beaten
- 1/2 cup diced carrots
- 1/3 cup green peas
- 2 cloves garlic, minced
- 2 green onions, sliced
- 2 to 3 tablespoons soy sauce
- 1 tablespoon oil
- 1/4 cup mayonnaise
- 2 tablespoons sweet chili sauce
- 1 tablespoon Sriracha
- 1 teaspoon rice vinegar
Instructions
- Mix mayonnaise, sweet chili sauce, Sriracha, and rice vinegar in a small bowl to make the bang bang sauce and set aside.
- Heat oil in a large skillet or wok over medium high heat then cook diced chicken with salt and pepper for 5 to 6 minutes until browned and cooked through.
- Remove the chicken then scramble the beaten eggs in the same pan until just set and remove.
- Add a drizzle of oil then sauté carrots and garlic for 2 to 3 minutes until slightly softened.
- Stir in green peas and cook for another minute.
- Add cold rice and stir fry for 3 to 4 minutes breaking up clumps and letting the rice crisp slightly.
- Return the chicken and eggs to the pan and mix with soy sauce.
- Pour the bang bang sauce over the rice and stir until evenly coated and heated through.
- Garnish with sliced green onions and serve hot.
Notes
- Use cold day old rice for the best fried rice texture.
- Cook ingredients in stages to prevent soggy fried rice.
- Adjust the amount of Sriracha to control the spice level of the bang bang sauce.
